- 1 onion (chopped)
- 4 cloves garlic (minced)
- 2 sprigs fresh thyme
- 2-3 scallions (chopped)
- 1-2 hot peppers (whole, optional)
- 6 cups chicken broth or water
- Salt to taste
- Black pepper to taste
- 2 tablespoons vegetable oil
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, sautéing until translucent.
- Add the chicken pieces to the pot and brown them on all sides.
- Pour in the chicken broth or water, and bring to a boil.
- Add the thyme, scallions, and hot peppers. Season with salt and black pepper.
- Reduce the heat to a simmer and cook for about 20 minutes.
- Add the green bananas, dasheen, carrots, and pumpkin to the pot.
- Cover and simmer for an additional 30-40 minutes, or until the vegetables are tender and the chicken is cooked through.
