Description

Ingredients
- 1 quart pig’s blood
- 1 cup rice, cooked

- 1 teaspoon allspice
- 1 teaspoon black pepper
- 1 teaspoon salt
- 1/2 teaspoon cayenne pepper
- 1/2 cup pork fat or lard, diced
- Natural sausage casings
Instructions
- Rinse the sausage casings in cold water and soak them in warm water for about 30 minutes.
- In a large bowl, combine the pig’s blood, cooked rice, breadcrumbs, chopped onion, minced garlic, thyme, parsley, allspice, black pepper, salt, and cayenne pepper. Mix well until all ingredients are thoroughly combined.
- In a skillet, render the pork fat or lard over medium heat until it becomes liquid. Allow it to cool slightly before adding it to the blood mixture. Stir well to incorporate.
- Carefully stuff the sausage casings with the blood mixture, being careful not to overfill. Tie off the ends securely with kitchen twine.
- Bring a large pot of water to a boil and gently place the stuffed sausages into the pot. Reduce the heat and simmer for about 1 hour.
- Once cooked, remove the sausages from the pot and allow them to cool.
- Slice and serve the black pudding either hot or cold, often accompanied by a side of pepper sauce or fried plantains.
