    Description

    Ingredients

    • 2 cups sorghum or millet
    • 8 cups water
    • 1/2 cup sugar (optional)
    • 1/4 teaspoon salt

    Instructions

    1. Rinse the sorghum or millet thoroughly under running water.
    2. Soak the grains in water for 24 hours to soften them.
    3. Drain the grains and grind them into a coarse flour using a mortar and pestle or a grain mill.
    4. In a large pot, combine the ground grains with 8 cups of water and bring to a boil.
    5. Reduce the heat and let it simmer for about 30 minutes, stirring occasionally to prevent sticking.
    6. Remove from heat and let it cool to room temperature.
    7. Once cooled, cover the pot with a clean cloth and allow it to ferment for 2-3 days in a warm place.
    8. After fermentation, strain the mixture through a fine sieve or cheesecloth into a clean container.
    9. If desired, add sugar and salt to taste.
    10. Serve chilled or at room temperature.
