    Instructions

    1. In a large pot, heat the palm oil over medium heat. Add the chopped onions and sauté until translucent.
    2. Stir in the minced garlic and grated ginger, cooking for another minute until fragrant.
    3. Add the goat meat to the pot and brown on all sides.
    4. Incorporate the chopped tomatoes, ground pepper, salt, coriander, and cumin, mixing well.
    5. Pour in the water, bring to a boil, then reduce heat to low. Cover and let simmer for about 1.5 hours or until the meat is tender.
    6. Once the meat is tender, add the chopped spinach or cassava leaves and cook for an additional 10 minutes.
