- In a large pot, heat the palm oil over medium heat.
- Add the chopped onions and sauté until translucent.
- Stir in the minced garlic and grated ginger, cooking for another minute.
- Add the chicken pieces to the pot, browning them on all sides.
- Incorporate the chopped tomatoes, ground peanuts, salt, black pepper, and cayenne pepper (if using).
- Pour in the chicken broth and bring to a boil.
- Reduce the heat, cover, and let simmer for about 30 minutes, or until the chicken is cooked through.
- Add the sliced okra and spinach or cassava leaves, cooking for an additional 10 minutes.
- Finish by adding the lemon juice before serving.
- Serve hot with rice or fufu.
