Instructions
- In a large pot, bring 4 cups of water to a boil.

- Remove from heat and let it steep for about 30 minutes.
- Strain the mixture into a large bowl, discarding the ginger pulp.
- Add the remaining 4 cups of water, lemon juice, and spices (if using) to the ginger syrup.
- Allow the mixture to cool to room temperature.
- Once cooled, sprinkle the yeast over the surface and stir gently.
- Cover the bowl with a clean cloth and let it sit at room temperature for 24-48 hours to ferment.
- After fermentation, strain the mixture again into clean bottles, leaving some space at the top.
- Seal the bottles and refrigerate. Serve chilled.
