Description
Moi Moi is a traditional Nigerian steamed bean pudding made from blended black-eyed peas, peppers, onions, and spices. This dish is not only a staple in Nigerian cuisine but also serves as a symbol of communal eating and celebration, often enjoyed at parties and gatherings.
Ingredients
- 2 cups black-eyed peas
- 1 medium onion, chopped
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 2-3 scotch bonnet peppers (to taste)
- 1/4 cup vegetable oil
- 1 teaspoon salt
- 1 teaspoon ground crayfish (optional)
- 2 cups water (or as needed)
- 1-2 tablespoons of seasoning cubes (optional)
- 1/2 cup cooked fish or meat (optional)
- Banana leaves or aluminum foil for wrapping
Instructions
- Soak the black-eyed peas in water for about 2 hours to soften.
- After soaking, peel the beans by rubbing them between your hands and rinsing to remove the skins.
- In a blender, combine the peeled beans, chopped onions, red and green bell peppers, scotch bonnet peppers, vegetable oil, and salt. Blend until smooth, adding water as needed to achieve a thick batter consistency.
- If using, fold in the cooked fish or meat and ground crayfish into the batter.
- Prepare your steaming setup by boiling water in a pot.
- Cut the banana leaves into squares or use aluminum foil to create cups.
- Fill each cup with the batter, leaving some space for expansion.
- Place the filled cups in the pot, cover, and steam for about 45-60 minutes until firm.
- Allow to cool slightly before serving.
