    Description

    Amala and Ewedu is a traditional Nigerian dish made from yam flour (amala) and jute leaves (ewedu). It is a staple food in many Yoruba households and is often enjoyed for its rich flavor and nutritional benefits, symbolizing cultural heritage and communal dining.

    Ingredients

    • 2 cups of yam flour (elubo)
    • 4 cups of water
    • 1 bunch of fresh ewedu leaves (jute leaves)
    • 2 cups of water (for ewedu)
    • 1/2 cup of ground crayfish
    • 1/2 cup of locust beans (iru)
    • Salt to taste
    • Pepper to taste (optional)

    Instructions

    1. In a pot, bring 4 cups of water to a boil. Gradually add the yam flour while stirring continuously to prevent lumps. Cook for about 10-15 minutes until it thickens and becomes smooth.
    2. In a separate pot, wash the ewedu leaves thoroughly and place them in 2 cups of water. Cook for about 10 minutes until the leaves are tender.
    3. Blend the cooked ewedu leaves with a little of the cooking water until smooth. Return to the pot and add ground crayfish, locust beans, and salt. Cook for another 5 minutes.
    4. Serve the amala with the ewedu on top or on the side, and enjoy with your choice of protein or stew.
