    Description

    Ingredients

    • 2 cups long-grain rice
    • 4 cups water or chicken broth
    • 1/4 cup vegetable oil

    • 1 can (400g) diced tomatoes
    • 2 tablespoons tomato paste
    • 1 teaspoon paprika
    • 1 teaspoon thyme
    • 1 teaspoon curry powder
    • Salt to taste
    • Black pepper to taste
    • 1 bell pepper, chopped
    • 1 cup mixed vegetables (carrots, peas, green beans)
    • Optional: protein of choice (chicken, beef, or fish)

    Instructions

    1. Rinse the rice under cold water until the water runs clear. Drain and set aside.
    2. In a large pot, heat the vegetable oil over medium heat. Add the chopped onions and sauté until translucent.
    3. Stir in the minced garlic and grated ginger, cooking for an additional minute.
    4. Add the diced tomatoes and tomato paste, cooking until the mixture thickens and the oil begins to separate.
    5. Season with paprika, thyme, curry powder, salt, and black pepper.
    6. Pour in the water or chicken broth and bring to a boil.
    7. Add the rinsed rice and stir well. Reduce the heat to low, cover, and simmer for about 20 minutes, or until the rice is cooked and the liquid is absorbed.
    8. In the last 5 minutes of cooking, add the chopped bell pepper and mixed vegetables.
    9. Fluff the rice with a fork and serve hot, optionally with your choice of protein.
