    Ingredients

    • 500g basmati rice
    • 1 kg chicken, cut into pieces

    • 1 cup yogurt
    • 1/4 cup cooking oil
    • 1/4 cup fresh coriander, chopped
    • 1/4 cup fresh mint, chopped
    • 2-3 whole cloves
    • 2-3 cardamom pods
    • 1 stick cinnamon
    • 1 tsp turmeric powder
    • 1 tsp cumin powder
    • 1 tsp coriander powder
    • Salt to taste
    • Water as needed
    • Saffron strands (optional)
    • Fried onions for garnish (optional)

    Instructions

    1. Rinse the basmati rice under cold water until the water runs clear. Soak it in water for 30 minutes, then drain.
    2. In a large pot, heat the cooking oil over medium heat. Add the sliced onions and sauté until golden brown.
    3. Add the minced garlic, grated ginger, and green chilies, cooking for another 2 minutes.
    4. Stir in the chopped tomatoes and cook until soft.
    5. Add the chicken pieces and cook until they are browned on all sides.
    6. Mix in the yogurt, turmeric, cumin, coriander, and salt. Cook for about 10 minutes until the chicken is tender.
    7. In a separate pot, bring water to a boil and add the soaked rice. Cook until the rice is 70% done, then drain.
    8. Layer the partially cooked rice over the chicken mixture, adding the whole spices (cloves, cardamom, cinnamon), chopped coriander, and mint.
    9. If using saffron, dissolve it in a little warm water and drizzle over the rice.
    10. Cover the pot tightly and cook on low heat for about 25-30 minutes, allowing the flavors to meld.
    11. Once done, fluff the rice gently and serve hot, garnished with fried onions if desired.
