    Description

    Alouda is a popular Mauritian beverage made from a blend of milk, basil seeds, and agar-agar, often flavored with vanilla or almond. This refreshing drink is especially enjoyed during hot weather and is a staple at street food stalls and local markets.

    Ingredients

    • 500 ml milk
    • 100 ml water
    • 2 tablespoons basil seeds
    • 2 tablespoons agar-agar strips
    • 100 g sugar (to taste)
    • 1 teaspoon vanilla extract or almond essence
    • Ice cubes (optional)

    Instructions

    1. Soak the basil seeds in water for about 30 minutes until they swell and become gelatinous.
    2. In a separate pot, bring the water to a boil and add the agar-agar strips. Stir continuously until completely dissolved.
    3. Add the milk and sugar to the pot with the dissolved agar-agar, and bring to a gentle simmer. Stir until the sugar is fully dissolved.
    4. Remove from heat and add the vanilla extract or almond essence.
    5. Allow the mixture to cool slightly, then stir in the soaked basil seeds.
    6. Pour the mixture into glasses or a pitcher and refrigerate until set, about 1-2 hours.
    7. Serve chilled, optionally over ice.
