Ingredients
- 2 cups of millet or rice
- 4 cups of water
- 1 teaspoon of salt
- 1 tablespoon of vegetable oil

- 1 bell pepper, chopped
- 1 teaspoon of ground cumin
- 1 teaspoon of ground coriander
- 1/2 teaspoon of chili powder (optional)
- Fresh herbs (like parsley or cilantro) for garnish
Instructions
- Rinse the millet or rice under cold water until the water runs clear.
- In a large pot, bring 4 cups of water to a boil. Add the rinsed millet or rice and salt.
- Reduce the heat to low, cover, and simmer for about 20 minutes or until the grains are tender and the water is absorbed.
- In a separate pan, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent.
- Add the chopped tomatoes and bell pepper to the pan, cooking until softened.
- Stir in the ground cumin, coriander, and chili powder (if using), cooking for an additional 2-3 minutes.
- Serve the cooked millet or rice topped with the vegetable sauce and garnish with fresh herbs.
