- 500g lamb or beef, cut into pieces
- 1 large onion, finely chopped
- 2 cloves garlic, minced

- 1 cup chickpeas, soaked overnight
- 1/2 cup vermicelli or rice
- 1 tablespoon tomato paste
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon paprika
- Salt to taste
- Black pepper to taste
- 2 tablespoons olive oil
- 6 cups water or broth
- Fresh cilantro or parsley for garnish
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onions and garlic, sautéing until translucent.
- Add the meat pieces and brown them on all sides.
- Stir in the chopped tomatoes, tomato paste, cumin, coriander, paprika, salt, and black pepper. Cook for about 5 minutes.
- Add the diced carrots, potatoes, and soaked chickpeas to the pot. Pour in the water or broth and bring to a boil.
- Reduce the heat and let it simmer for about 1 hour, or until the meat is tender.
- Add the vermicelli or rice and cook for an additional 10-15 minutes until they are cooked through.
- Taste and adjust seasoning if necessary.
- Serve hot, garnished with fresh cilantro or parsley.
