Chebakia is a traditional Mauritanian pastry made from dough that is shaped into intricate designs, fried until golden, and then coated in honey and sesame seeds. Ingredients
- 500g all-purpose flour
- 1 tsp ground cinnamon
- 1/2 tsp ground ginger
- 1/4 tsp ground nutmeg
- 1/4 tsp salt
- 2 tbsp sesame seeds
- 1/2 cup unsalted butter, melted
- 1/4 cup orange blossom water
- 1/2 cup water
- 1 cup honey
- 1 cup vegetable oil for frying
- 1/2 cup chopped almonds for garnish
Instructions
- In a large bowl, mix the flour, cinnamon, ginger, nutmeg, and salt.
- Add the melted butter and mix until crumbly.
- Gradually add the orange blossom water and water, kneading until a smooth dough forms.
- Cover the dough and let it rest for 30 minutes.
- Roll the dough into thin sheets and cut into strips.
- Shape each strip into a figure-eight or other decorative shapes.
- Heat the vegetable oil in a deep pan and fry the shaped dough until golden brown.
- Remove and drain excess oil on paper towels.
- In a separate pot, warm the honey and dip the fried pastries into it, then sprinkle with sesame seeds and chopped almonds.
- Allow to cool before serving.
