    Ingredients

    • 500g dried usipa (small sardines)
    • 2 tablespoons vegetable oil
    • 1 onion, chopped
    • 2 tomatoes, chopped

    • 1 teaspoon ground pepper
    • 1 tablespoon ground coriander
    • 1 cup water

    Instructions

    1. Rinse the dried usipa in cold water to remove any excess salt. Drain and set aside.
    2. In a large pot, heat the vegetable oil over medium heat.
    3. Add the chopped onion and sauté until translucent.
    4. Stir in the chopped tomatoes and cook until they soften.
    5. Add the rinsed usipa to the pot along with salt, ground pepper, and ground coriander.
    6. Pour in the water and bring to a simmer.
    7. Cover and cook for about 15-20 minutes, stirring occasionally, until the fish is heated through and flavors meld.
    8. Serve hot with nsima or rice.
