    Description

    Ingredients

    • 2 cups long-grain rice
    • 4 cups water
    • 1/4 cup olive oil
    • 1 large onion, finely chopped
    • 2 cloves garlic, minced
    • 2 large tomatoes, chopped
    • 1 tablespoon tomato paste
    • 1 teaspoon paprika
    • 1 teaspoon cumin
    • 1/2 teaspoon cinnamon
    • Salt to taste
    • Black pepper to taste
    • Fresh parsley for garnish

    Instructions

    1. Rinse the rice under cold water until the water runs clear, then soak it in water for about 30 minutes. Drain and set aside.
    2. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent.
    3. Stir in the minced garlic and cook for an additional minute.
    4. Add the chopped tomatoes and tomato paste, cooking until the tomatoes break down and form a sauce.
    5. Mix in the paprika, cumin, cinnamon, salt, and black pepper, and cook for another 2 minutes.
    6. Add the drained rice to the pot and stir well to coat the rice with the tomato mixture.
    7. Pour in the water, bring to a boil, then reduce the heat to low. Cover and simmer for about 20 minutes, or until the rice is cooked and the water is absorbed.
    8. Remove from heat and let it sit covered for an additional 5 minutes. Fluff the rice with a fork and garnish with fresh parsley before serving.
