Description
Muhammar is a traditional Libyan dish made from rice cooked with caramelized onions and raisins, often flavored with spices such as cinnamon and cardamom. It is a beloved comfort food that reflects the rich culinary heritage of Libya, often served during family gatherings and special occasions.
Ingredients
- 2 cups of long-grain rice
- 4 cups of water
- 2 large onions, thinly sliced
- 1/2 cup of raisins
- 1/4 cup of olive oil
- 1 teaspoon of ground cinnamon
- 1/2 teaspoon of ground cardamom
- Salt to taste
- Black pepper to taste
- Chopped fresh parsley for garnish (optional)
Instructions
- Rinse the rice under cold water until the water runs clear, then soak it in water for about 30 minutes. Drain and set aside.
- In a large pot, heat the olive oil over medium heat. Add the sliced onions and sauté until they are golden brown and caramelized, about 15-20 minutes.
- Stir in the raisins, ground cinnamon, ground cardamom, salt, and black pepper, cooking for another 2-3 minutes.
- Add the soaked rice to the pot and stir to combine with the onion mixture.
- Pour in the water and bring to a boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 20 minutes, or until the rice is cooked and the water is absorbed.
- Remove from heat and let it sit covered for an additional 10 minutes. Fluff the rice with a fork before serving.
- Garnish with chopped parsley if desired and serve warm.
