Liberia Jollof Rice
Description

Ingredients
- 2 cups long-grain parboiled rice
- 1/4 cup vegetable oil
- 1 medium onion, chopped
- 1 red bell pepper, chopped

- 2 cups tomato puree
- 1 tablespoon tomato paste
- 1 teaspoon thyme
- 1 teaspoon curry powder
- 1 teaspoon paprika
- 4 cups chicken or vegetable broth
- Salt to taste
- Black pepper to taste
- 1 cup mixed vegetables (carrots, peas, corn)
- Optional: 1-2 cups cooked chicken or beef, chopped
Instructions
- Rinse the rice under cold water until the water runs clear, then soak it in water for about 30 minutes. Drain and set aside.
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onions and sauté until translucent.
- Stir in the chopped red and green bell peppers, cooking for another 3-4 minutes.
- Add the tomato puree and tomato paste to the pot, mixing well. Cook for about 10 minutes, stirring occasionally, until the sauce thickens.
- Season the sauce with thyme, curry powder, paprika, salt, and black pepper.
- Pour in the chicken or vegetable broth and bring to a boil.
- Add the drained rice to the pot, stirring to combine. Reduce the heat to low, cover the pot, and let it simmer for about 20-25 minutes, or until the rice is cooked and has absorbed the liquid.
- In the last 5 minutes of cooking, add the mixed vegetables and optional cooked meat, stirring gently.
- Once done, fluff the rice with a fork and let it sit covered for an additional 5 minutes before serving.
