    Ingredients

    • 2 cups long-grain parboiled rice

    • 1 teaspoon thyme
    • 1 teaspoon curry powder

    • 1 cup mixed vegetables (carrots, peas, corn)
    • Optional: 1-2 cups cooked chicken or beef, chopped

    Instructions

    1. Rinse the rice under cold water until the water runs clear, then soak it in water for about 30 minutes. Drain and set aside.
    2. In a large pot, heat the vegetable oil over medium heat. Add the chopped onions and sauté until translucent.
    3. Stir in the chopped red and green bell peppers, cooking for another 3-4 minutes.
    4. Add the tomato puree and tomato paste to the pot, mixing well. Cook for about 10 minutes, stirring occasionally, until the sauce thickens.
    5. Season the sauce with thyme, curry powder, paprika, salt, and black pepper.
    6. Pour in the chicken or vegetable broth and bring to a boil.
    7. Add the drained rice to the pot, stirring to combine. Reduce the heat to low, cover the pot, and let it simmer for about 20-25 minutes, or until the rice is cooked and has absorbed the liquid.
    8. In the last 5 minutes of cooking, add the mixed vegetables and optional cooked meat, stirring gently.
    9. Once done, fluff the rice with a fork and let it sit covered for an additional 5 minutes before serving.
