    Ingredients

    • 2 kg beef, cut into cubes
    • 4 medium potatoes, peeled and cubed
    • 3 carrots, sliced
    • 2 onions, chopped
    • 4 cloves garlic, minced
    • 1 cup green beans, trimmed
    • 2 cups beef broth
    • 2 tablespoons vegetable oil
    • 1 tablespoon paprika
    • 1 teaspoon black pepper
    • 1 teaspoon salt
    • 1 teaspoon dried thyme
    • 2 bay leaves
    • 1 cup water

    Instructions

    1. Heat the vegetable oil in a potjie pot over an open fire.
    2. Add the chopped onions and garlic, sauté until translucent.
    3. Add the beef cubes and brown them on all sides.
    4. Sprinkle in the paprika, black pepper, salt, and thyme, stirring to coat the meat.
    5. Layer the potatoes, carrots, and green beans on top of the meat without stirring.
    6. Pour in the beef broth and water, adding the bay leaves on top.
    7. Cover the potjie with its lid and let it simmer for about 2-3 hours, checking occasionally to ensure it does not dry out.
    8. Once the meat is tender and the vegetables are cooked through, remove from heat and serve hot.
