    Instructions

    1. In a bowl, mix the flour, salt, and vegetable oil until crumbly. Gradually add water to form a smooth dough. Cover and let it rest for 30 minutes.
    2. In a pan, heat a little oil and sauté the onions, garlic, and ginger until golden. Add cumin seeds, coriander powder, garam masala, and salt.
    3. Stir in the mashed potatoes and peas, mixing well. Cook for a few minutes and then let the filling cool.
    4. Divide the dough into small balls and roll each into thin circles. Cut each circle in half to form two semi-circles.
    5. Take one semi-circle, fold it into a cone shape, sealing the edge with a little water. Fill the cone with the potato mixture and seal the open edge with water.
    6. Heat oil in a deep pan and fry the samosas until golden brown. Drain on paper towels before serving.
