    Ingredients

    • 2 cups of potatoes, peeled and chopped
    • 1 cup of green peas, fresh or frozen
    • 1 cup of corn, fresh or frozen
    • 1 medium onion, chopped
    • 2 tablespoons of vegetable oil or butter
    • Salt to taste
    • Water as needed

    Instructions

    1. In a large pot, add the chopped potatoes and cover with water. Bring to a boil and cook until tender, about 15-20 minutes.
    2. In a separate pan, heat the vegetable oil or butter over medium heat. Add the chopped onion and sauté until translucent.
    3. Add the green peas and corn to the onions and cook for about 5 minutes until heated through.
    4. Drain the potatoes and return them to the pot. Mash the potatoes until smooth.
    5. Add the sautéed peas, corn, and onions to the mashed potatoes. Mix well and season with salt to taste.
    6. If the mixture is too thick, add a little water to achieve the desired consistency.
    7. Serve warm as a side dish or main meal.
