Description

Ingredients
- 2 cups of maize (dried corn)
- 1 cup of kidney beans (or any local beans)

Instructions
- Rinse the maize and beans thoroughly and soak them in water overnight.
- Drain and place the soaked maize and beans in a large pot. Add 2 cups of water and bring to a boil.
- Reduce heat and simmer for about 1-1.5 hours, or until the maize and beans are tender.
- In a separate pan, heat the vegetable oil over medium heat. Add the chopped onions and sauté until translucent.
- Add the minced garlic and grated ginger, cooking for another minute until fragrant.
- Stir in the chopped tomatoes and cook until they break down and form a sauce.
- Add the cooked maize and beans to the tomato mixture, along with the salt, black pepper, and any optional vegetables (carrots, potatoes, spinach).
- Stir everything together and add additional water if needed to achieve desired consistency.
- Cover and simmer for an additional 15-20 minutes, allowing the flavors to meld.
- Serve warm as a main dish or side.
