Ingredients
- 2 lbs goat meat, cut into pieces
- 2 tablespoons Jamaican curry powder
- 1 teaspoon allspice (pimento) powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon cayenne pepper (optional)
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 inch piece of ginger, grated
- 2-3 scallions, chopped
- 1-2 Scotch bonnet peppers, whole (adjust for heat preference)
- 2 tablespoons vegetable oil
- 4 cups water
- 2 medium potatoes, peeled and diced
- 1 carrot, sliced
- 1 bell pepper, chopped
- 1 tablespoon fresh thyme or 1 teaspoon dried thyme
Instructions
- In a large bowl, combine goat meat with curry powder, allspice, salt, black pepper, and cayenne pepper. Mix well and let marinate for at least 2 hours, preferably overnight in the refrigerator.
- Heat vegetable oil in a large pot over medium heat. Add the marinated goat meat and brown on all sides.
- Add onions, garlic, ginger, scallions, and whole Scotch bonnet peppers to the pot. Sauté for about 5 minutes until the onions are translucent.
- Pour in the water, bring to a boil, then reduce heat to low. Cover and simmer for about 1.5 to 2 hours, or until the goat meat is tender.
- Add diced potatoes, sliced carrot, chopped bell pepper, and thyme to the pot. Stir well and cook for an additional 30 minutes, or until the vegetables are tender.
- Adjust seasoning if necessary and serve hot with rice and peas or roti.
