Ingredients
- 2 cups of long-grain white rice
- 1 cup of dried djon djon mushrooms

- 1 teaspoon of thyme
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- 1/2 teaspoon of paprika
- 2 green onions, chopped (for garnish)
Instructions
- Rinse the dried djon djon mushrooms in cold water to remove any debris. Soak them in 4 cups of water for about 30 minutes to rehydrate. After soaking, strain the liquid and reserve it, discarding the mushrooms.
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion, garlic, and bell pepper, sautéing until the vegetables are soft and fragrant.
- Add the rinsed rice to the pot, stirring to coat the grains with the oil and vegetables.
- Pour in the reserved mushroom liquid and add the thyme, salt, black pepper, and paprika. Stir well to combine.
- Bring the mixture to a boil, then reduce the heat to low, cover the pot, and let it simmer for about 20 minutes or until the rice is cooked and has absorbed all the liquid.
- Once cooked, fluff the rice with a fork and garnish with chopped green onions before serving.
