Ingredients

- Yeast – 1 packet (approximately 7 grams)

Instructions
- Begin by extracting juice from fresh sugarcane using a sugarcane press. Ensure the juice is clear and free from impurities.
- Pour the fresh sugarcane juice into a fermentation vessel. If the juice is too thick, dilute it with water to achieve a more suitable consistency for fermentation.
- Add the yeast to the sugarcane juice and stir gently to combine.
- Cover the fermentation vessel with a clean cloth to allow air circulation while preventing contaminants from entering.
- Let the mixture ferment for about 5 to 7 days at room temperature, stirring daily. You will know fermentation is complete when bubbling slows down and a slight alcohol smell is present.
- Once fermentation is complete, strain the liquid to remove any solids.
- Transfer the liquid to a distillation apparatus and heat it slowly. Collect the distillate, which is your clairin.
- Optionally, infuse the clairin with flavorings such as ginger or lime by adding them to the distillate and letting it sit for a few days before bottling.
- Bottle the clairin and store it in a cool, dark place.
