Ingredients
- 1 kg chicken, cut into pieces
- 4 large onions, thinly sliced
- 4 cloves garlic, minced
- 1/2 cup lemon juice

- 2 tablespoons Dijon mustard
- 1 teaspoon black pepper
- 1 teaspoon salt
- 1 teaspoon cayenne pepper (optional)
- 1 cup chicken broth
- 2 bay leaves
- 1/2 cup olives (optional)
- Fresh parsley for garnish
Instructions
- In a large bowl, combine the chicken pieces with lemon juice, garlic, Dijon mustard, black pepper, salt, and cayenne pepper. Marinate for at least 2 hours, preferably overnight in the refrigerator.
- Heat the vegetable oil in a large pot over medium heat. Add the sliced onions and cook until they are soft and translucent, about 10 minutes.
- Remove the onions and set aside. In the same pot, add the marinated chicken pieces and brown them on all sides.
- Once the chicken is browned, return the onions to the pot, add the chicken broth, bay leaves, and olives if using.
- Cover and simmer for about 30-40 minutes, or until the chicken is cooked through and tender.
- Adjust seasoning if necessary.
- Serve hot, garnished with fresh parsley, alongside rice or couscous.
