Instructions
- Rinse the rice under cold water until the water runs clear, then soak for 30 minutes. Drain and set aside.
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onions and sauté until translucent.
- Stir in the garlic and ginger, cooking for an additional 2 minutes.
- Add the diced tomatoes and tomato paste, cooking until the mixture thickens and the oil separates from the sauce.
- Incorporate the chopped bell pepper, paprika, thyme, bay leaf, salt, and black pepper. Cook for another 5 minutes.
- Add the soaked rice to the pot, stirring to coat the grains in the tomato mixture.
- Pour in the broth and bring to a boil. Reduce heat to low, cover, and simmer for 20-25 minutes until the rice is cooked and has absorbed the liquid.
- Stir in the mixed vegetables and cook for an additional 5 minutes.
- Remove from heat and let it sit covered for 10 minutes before serving.
- Serve with optional cooked chicken or fish on the side.
