    Ingredients

    • 1 large breadfruit, peeled and cut into chunks
    • 2 cups coconut milk

    • 2 cloves of garlic, minced
    • 1 bell pepper, chopped
    • 2 sprigs of thyme
    • 1 teaspoon black pepper
    • 1 teaspoon allspice
    • 2 cups of water
    • 1 carrot, sliced
    • 1 cup of green beans, trimmed
    • 2 tablespoons of vegetable oil
    • Salt to taste

    Instructions

    1. In a large pot, heat the vegetable oil over medium heat. Add the chopped onion, garlic, and bell pepper, and sauté until softened.
    2. Add the chicken pieces to the pot and cook until browned on all sides.
    3. Stir in the flaked salt fish, thyme, black pepper, and allspice, mixing well.
    4. Pour in the coconut milk and water, and bring to a simmer.
    5. Add the breadfruit chunks, carrot slices, and green beans to the pot.
    6. Cover and let it cook on low heat for about 45 minutes, or until the breadfruit is tender and the flavors meld together.
