- 1/4 cup lime juice
- 2 green onions, chopped (for garnish)
Instructions
- Begin by cleaning and tenderizing the conch. Use a meat mallet to pound it gently until tender. Rinse and cut into bite-sized pieces.
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion, garlic, and bell pepper, sautéing until soft.
- Stir in the diced tomatoes, thyme, allspice, black pepper, and salt. Cook for about 5 minutes until the tomatoes break down.
- Add the conch pieces and Scotch bonnet pepper to the pot. Stir well to combine.
- Pour in the coconut milk and lime juice, bringing the mixture to a simmer. Cover and let it cook for about 30-40 minutes, or until the conch is tender.
- Remove the Scotch bonnet pepper before serving. Garnish with chopped green onions and serve hot.
