Ingredients
- 2 pounds goat meat, cut into pieces
- 2 tablespoons curry powder

- 1 teaspoon black pepper

- 2 tablespoons vegetable oil
- 1 large onion, chopped
- 4 cloves garlic, minced
- 1 inch ginger, grated
- 2-3 sprigs fresh thyme
- 2-3 scallions, chopped
- 2-3 hot peppers, whole (optional)
- 2 cups water
- 1 large carrot, sliced
- 1 bell pepper, chopped
- 1 can (14 oz) coconut milk
Instructions
- In a large bowl, combine goat meat with curry powder, allspice, black pepper, and salt. Mix well and let marinate for at least 1 hour, preferably overnight in the refrigerator.
- Heat vegetable oil in a large pot over medium heat. Add chopped onions, garlic, and ginger, and sauté until onions are translucent.
- Add the marinated goat meat to the pot and brown on all sides.
- Stir in thyme, scallions, and whole hot peppers.
- Pour in water and bring to a boil. Reduce heat to low, cover, and simmer for about 1.5 to 2 hours, or until the goat is tender.
- Add sliced carrots and chopped bell pepper, and continue to cook for another 20 minutes.
- Stir in coconut milk and simmer for an additional 10 minutes.
- Adjust seasoning if necessary and serve hot with rice or roti.
