Ingredients
- 1 kg chicken (cut into pieces)
- 2 medium-sized tomatoes (blended)
- 1 medium onion (chopped)
- 1-2 scotch bonnet peppers (to taste)
- 4 cups water
- 1 teaspoon salt (to taste)
- 1 teaspoon ground black pepper
- 1 tablespoon ground ginger
- 1 tablespoon ground garlic
- 2-3 dried fish (optional)
- Fresh basil leaves (for garnish)
Instructions
- In a large pot, add the chicken pieces and cover with water. Bring to a boil over medium heat.
- Once boiling, skim off any foam that rises to the surface.
- Add the chopped onions, blended tomatoes, ground ginger, ground garlic, salt, and black pepper to the pot.
- Reduce the heat and let it simmer for about 30 minutes until the chicken is tender.
- If using, add the dried fish for additional flavor and simmer for another 10 minutes.
- Adjust seasoning as needed and add the scotch bonnet peppers whole for a spicy kick.
- Once done, remove from heat and let it rest for a few minutes.
- Serve hot, garnished with fresh basil leaves, alongside fufu or rice balls.
