- 2 cups long-grain parboiled rice

- 2 tablespoons tomato paste
- 1 teaspoon thyme

- 1 cup mixed vegetables (carrots, peas, green beans)
- Optional: protein of choice (chicken, beef, or fish)
Instructions
- Rinse the rice under cold water until the water runs clear, then soak it in water for about 30 minutes. Drain and set aside.
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onions and sauté until translucent.
- Stir in the garlic, ginger, and red bell pepper, cooking for another 2-3 minutes until fragrant.
- Add the diced tomatoes and tomato paste, cooking until the mixture thickens and the oil begins to separate from the sauce.
- Season with thyme, curry powder, bay leaves, salt, and pepper.
- Pour in the chicken or vegetable broth, bringing the mixture to a boil.
- Add the drained rice to the pot, stirring well to combine.
- Reduce the heat to low, cover the pot tightly, and let it simmer for about 20-30 minutes, or until the rice is cooked and has absorbed the liquid.
- In the last 10 minutes of cooking, add the mixed vegetables and protein (if using) to the pot, stirring gently.
- Once cooked, fluff the rice with a fork and serve hot.
