- 1 kg chicken, cut into pieces
- 4 large onions, thinly sliced

- 1 teaspoon black pepper
- 1 teaspoon salt
- 1 teaspoon paprika
- 2 cups chicken broth
- 2-3 bay leaves
- 1 cup sliced carrots
- 1 cup sliced bell peppers
- Rice, for serving
Instructions
- In a large bowl, combine the chicken pieces with lemon juice, Dijon mustard, garlic, black pepper, salt, and paprika. Marinate for at least 2 hours, preferably overnight.
- Heat vegetable oil in a large pot over medium heat. Add the sliced onions and cook until they are soft and translucent.
- Remove the marinated chicken from the bowl and add it to the pot, browning on all sides.
- Add the green chilies, chicken broth, bay leaves, carrots, and bell peppers to the pot. Bring to a boil, then reduce heat and simmer for about 30-40 minutes until the chicken is cooked through and tender.
- Adjust seasoning as needed and serve hot over rice.
