Ingredients
- 2 cups of broken rice
- 1 large fish (such as bream or snapper), cleaned and scaled
- 1 onion, chopped
- 2 tomatoes, chopped
- 1 bell pepper, chopped
- 2 carrots, sliced
- 1 eggplant, diced
- 1 cup of cabbage, chopped
- 1/2 cup of groundnut oil
- 2 cloves of garlic, minced
- 1 teaspoon of ginger, grated
- 1 teaspoon of chili powder
- Salt to taste
- Black pepper to taste
- 2 cups of water
- 1 lemon, juiced
Instructions
- Rinse the broken rice under cold water until the water runs clear, then soak it for 30 minutes.
- In a large pot, heat the groundnut oil over medium heat. Add the chopped onions and sauté until translucent.
- Add the garlic, ginger, and chili powder, stirring for a minute until fragrant.
- Add the chopped tomatoes and bell pepper, cooking until soft.
- Incorporate the fish into the pot, seasoning with salt, black pepper, and lemon juice. Cook for about 5 minutes on each side until the fish is browned.
- Remove the fish and set aside.
- Add the carrots, eggplant, and cabbage to the pot, stirring well.
- Pour in the water and bring to a boil.
- Add the soaked rice, stirring gently.
- Place the fish on top of the rice and cover the pot. Reduce the heat to low and let it simmer for about 30-40 minutes until the rice is cooked and has absorbed the flavors.
- Fluff the rice with a fork and serve hot, garnished with additional vegetables if desired.
