- 4 cups water
- 2 tablespoons palm oil or vegetable oil

- Add the chopped onion and sauté until translucent.
- Stir in the minced garlic, ground ginger, ground cumin, and chili powder, cooking for an additional 2 minutes.
- Add the soaked black-eyed peas to the pot and mix well with the spices.
- Pour in the water and bring to a boil.
- Reduce the heat to low, cover, and simmer for about 30-40 minutes, or until the peas are tender.
- Season with salt to taste.
- Serve hot, garnished with fresh parsley or cilantro.
