Description
Tej is a traditional Ethiopian honey wine that is often homemade and enjoyed during celebrations and social gatherings. It is a symbol of hospitality and is deeply rooted in Ethiopian culture, often served in a special flask called a ‘berele’.
Ingredients
- 4 cups of water
- 1 cup of honey
- 1/4 cup of gesho leaves (Rhamnus prinoides)
- 1/4 teaspoon of yeast (optional, for fermentation acceleration)
Instructions
- Boil the water in a large pot.
- Once boiling, remove from heat and let it cool slightly.
- Add the honey to the warm water and stir until fully dissolved.
- Add the gesho leaves to the mixture and stir well.
- Allow the mixture to cool to room temperature.
- If using, sprinkle the yeast over the mixture and stir gently.
- Transfer the mixture to a clean glass container or a traditional berele.
- Cover the container with a cloth and let it ferment at room temperature for about 2-3 weeks.
- After fermentation, strain the liquid to remove the gesho leaves.
- Bottle the Tej and refrigerate. Serve chilled.
