Ingredients
- 2 cups long-grain rice
- 4 cups chicken broth
- 1 cup diced chicken
- 1 cup diced pork
- 1 cup shrimp, peeled and deveined
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 cup peas
- 2 tomatoes, chopped
- 1 teaspoon paprika
- 1 teaspoon black pepper
- Salt to taste
- 2 tablespoons vegetable oil
- Fresh parsley for garnish
Instructions
- Rinse the rice under cold water until the water runs clear. Drain and set aside.
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and garlic, sautéing until translucent.
- Add the diced chicken and pork to the pot, cooking until browned.
- Stir in the bell pepper, tomatoes, and peas, cooking for an additional 5 minutes.
- Add the rinsed rice to the pot, stirring to combine with the meat and vegetables.
- Pour in the chicken broth and season with paprika, black pepper, and salt. Bring to a boil.
- Once boiling, reduce the heat to low, cover, and simmer for 20 minutes or until the rice is cooked and the liquid is absorbed.
- In the last 5 minutes of cooking, add the shrimp on top of the rice, covering to steam.
- Once done, remove from heat and let it sit covered for 5 minutes. Fluff with a fork and garnish with fresh parsley before serving.
