Description

Ingredients
- 500g fresh molokhia leaves (or 200g dried molokhia)
- 1 liter chicken or vegetable broth
- 2 tablespoons olive oil or butter

- 4 cloves garlic, minced
- 1 teaspoon ground coriander
- Salt to taste
- Pepper to taste
- Juice of 1 lemon
- Cooked chicken or rabbit (optional, for serving)
- Rice (for serving)
Instructions
- If using fresh molokhia, wash the leaves thoroughly and chop them finely. If using dried molokhia, soak it in water for about 30 minutes.
- In a large pot, heat the olive oil or butter over medium heat. Add the chopped onion and sauté until translucent.
- Add the minced garlic and ground coriander, cooking for an additional minute until fragrant.
- Pour in the chicken or vegetable broth and bring to a boil.
- Once boiling, reduce the heat and add the chopped molokhia. Stir well and let it simmer for about 10-15 minutes, stirring occasionally.
- Season with salt, pepper, and lemon juice.
- If desired, add cooked chicken or rabbit to the pot to warm through.
- Serve hot over rice, garnished with additional lemon juice if desired.
