Basbousa is a traditional Egyptian semolina cake soaked in sugar syrup, known for its sweet, moist texture and rich flavor. It is often enjoyed during celebrations and gatherings, symbolizing hospitality and generosity in Egyptian culture.

    Ingredients

    • 1 cup semolina
    • 1 cup plain yogurt
    • 1 cup granulated sugar
    • 1/2 cup melted butter
    • 1 teaspoon baking powder
    • 1/4 cup blanched almonds (for garnish)
    • 1 cup water (for syrup)
    • 1 cup granulated sugar (for syrup)
    • 1 teaspoon lemon juice (for syrup)
    • 1 teaspoon vanilla extract (optional)

    Instructions

    1. Preheat the oven to 350°F (175°C). Grease a 9×9 inch baking dish.
    2. In a mixing bowl, combine semolina, yogurt, sugar, melted butter, and baking powder. Mix well until smooth.
    3. Pour the batter into the prepared baking dish and smooth the top.
    4. Using a knife, score the surface into diamond or square shapes and place an almond in the center of each piece.
    5. Bake in the preheated oven for 30-35 minutes, or until golden brown.
    6. While the cake is baking, prepare the syrup by combining water, sugar, and lemon juice in a saucepan. Bring to a boil, then reduce heat and simmer for about 10 minutes. Remove from heat and stir in vanilla extract if using.
    7. Once the cake is done, remove it from the oven and immediately pour the hot syrup over the hot cake. Allow it to soak for at least 30 minutes before serving.
