Mofongo is a traditional Dominican dish made from fried green plantains that are mashed and mixed with garlic, pork cracklings, and seasonings. It holds a significant place in Dominican cuisine, often enjoyed as a comfort food that reflects the island’s rich culinary heritage.
Ingredients
- 4 green plantains
- 2 cloves of garlic
- 1 cup of chicharrón (fried pork cracklings)
- 1/4 cup of olive oil
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- 1/2 cup of chicken broth (optional)
- Fresh cilantro for garnish (optional)
Instructions
- Peel the green plantains and cut them into 1-inch thick slices.
- Heat oil in a deep frying pan over medium heat. Fry the plantain slices until golden brown, about 5-7 minutes. Remove and drain on paper towels.
- In a mortar and pestle (or a bowl), mash the garlic with a pinch of salt.
- Add the fried plantains and chicharrón to the garlic mixture and continue to mash until well combined.
- If the mixture is too dry, add chicken broth gradually until you reach the desired consistency.
- Form the mixture into a ball or mound shape.
- Serve warm, garnished with fresh cilantro if desired.
