Ingredients
- 500g of lamb or beef, cut into cubes
- 2 cups of water
- 1 large onion, chopped
- 2 cloves of garlic, minced

- 1 bell pepper, chopped
- 2 medium tomatoes, diced
- 1 teaspoon of cumin
- 1 teaspoon of coriander
- 1 teaspoon of turmeric
- Salt to taste
- Black pepper to taste
- 2 tablespoons of vegetable oil
- Fresh cilantro for garnish
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onions and sauté until translucent.
- Stir in the minced garlic and grated ginger, cooking for an additional minute.
- Add the cubed meat to the pot, browning it on all sides.
- Incorporate the sliced carrots, chopped bell pepper, and diced tomatoes.
- Sprinkle in the cumin, coriander, turmeric, salt, and black pepper, stirring well to combine.
- Pour in the water, bringing the mixture to a boil.
- Reduce the heat to low, cover the pot, and let it simmer for about 1.5 hours, or until the meat is tender.
- Once cooked, adjust seasoning if necessary and garnish with fresh cilantro before serving.
- Serve hot over a bed of rice.
