Description
Roz is a traditional Chadian dish made primarily from rice, often served with a flavorful sauce or stew. It holds cultural significance as a staple food in Chad, reflecting the agricultural practices and communal dining traditions of the region.
Ingredients
- 2 cups of long-grain rice
- 4 cups of water
- 1 tablespoon of vegetable oil
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 1 teaspoon of salt
- 1 teaspoon of black pepper
- 1 teaspoon of ground cumin
- 1 teaspoon of ground coriander
- 1 cup of mixed vegetables (carrots, peas, and bell peppers)
- 1 cup of cooked meat (chicken or beef, optional)
Instructions
- Rinse the rice under cold water until the water runs clear. Drain and set aside.
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent.
- Stir in the minced garlic and cook for another minute.
- Add the rinsed rice to the pot and stir to coat the grains with the oil and onion mixture.
- Pour in the water, add salt, black pepper, cumin, and coriander, and bring to a boil.
- Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 15-20 minutes or until the rice is tender and the water is absorbed.
- In the last 5 minutes of cooking, add the mixed vegetables and cooked meat (if using) to the pot, fluffing the rice gently with a fork.
- Remove from heat and let it sit covered for an additional 5 minutes before serving.
