Description

Ingredients
- 1 kg of goat meat or fish (catfish or tilapia)
- 2 liters of water
- 2 tablespoons of ground crayfish
- 1 tablespoon of ground pepper (or to taste)
- 1 tablespoon of ground ginger
- 1 tablespoon of ground garlic
- 1 onion, chopped
- 2-3 tablespoons of vegetable oil
- Salt to taste
- 2-3 sprigs of fresh scent leaves (or basil) for garnish
- Optional: 1-2 Scotch bonnet peppers for extra heat
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onions and sauté until translucent.
- Add the meat or fish to the pot and sear for a few minutes until browned.
- Pour in the water and bring to a boil. Reduce the heat and let it simmer for about 30 minutes (or until the meat is tender).
- Stir in the ground crayfish, ground pepper, ground ginger, and ground garlic. Add salt to taste.
- If using, add the Scotch bonnet peppers for extra heat.
- Continue to simmer for another 10-15 minutes to allow the flavors to meld.
- Remove from heat and garnish with fresh scent leaves before serving.
- Serve hot, often accompanied by rice or plantains.
