- Once heated, remove the pot from the heat and add the vinegar or lemon juice. Stir gently for a few seconds until the milk curdles.
- Let the mixture sit for about 10-15 minutes to allow the curds to form.
- Line a colander with cheesecloth and pour the curdled milk into the colander to drain the whey.
- Rinse the curds under cold water to remove the acidity from the vinegar or lemon juice.
- Gather the cheesecloth and squeeze out excess moisture.
- Transfer the curds to a bowl, add salt and any herbs if desired, and mix well.
- Shape the cheese into a round or block form and wrap it in cheesecloth.
- Place the wrapped cheese in a weighty dish to press it for about 1-2 hours.
- Unwrap the cheese and store it in the refrigerator. It can be enjoyed fresh or aged for a stronger flavor.
