- 2 liters of water

- Salt to taste
- Black pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- In a large pot, place the whole chicken and cover it with 2 liters of water. Bring to a boil over medium heat.
- Skim off any foam that rises to the surface.
- Add the chopped onion, minced garlic, bay leaf, salt, and black pepper. Reduce heat and let it simmer for about 30 minutes.
- After 30 minutes, remove the chicken from the pot and set it aside to cool.
- Add the diced carrots and potatoes to the broth and cook for another 15 minutes.
- While the vegetables are cooking, shred the chicken into bite-sized pieces, discarding the skin and bones.
- Add the rice to the pot and cook for an additional 15 minutes until the rice is tender.
- Stir in the shredded chicken and let it heat through for a few minutes.
- Adjust seasoning if necessary.
- Serve hot, garnished with fresh parsley.
