    • 1 teaspoon fresh thyme leaves
    • 1/2 teaspoon allspice
    • Salt to taste
    • Black pepper to taste

    Instructions

    1. Rinse the rice under cold water until the water runs clear. Drain and set aside.
    2. In a large pot, combine the coconut milk, water, pigeon peas (or kidney beans), green onions, garlic, thyme, allspice, salt, and black pepper. Bring to a boil over medium heat.
    3. Once boiling, add the rinsed rice to the pot, stir well, and return to a boil.
    4. Reduce the heat to low, cover the pot, and simmer for about 20-25 minutes, or until the rice is tender and the liquid is absorbed.
    5. Remove from heat and let it sit covered for an additional 5 minutes. Fluff the rice with a fork before serving.
