Description
Black Pudding is a traditional dish made from pig’s blood, spices, and various fillers such as rice or barley. Ingredients
- 2 cups pig’s blood
- 1 cup rice (or barley)

- 1 teaspoon salt
- 1/2 teaspoon nutmeg
- 1/2 cup scallions, chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup vegetable oil
- 1 hog casing (cleaned and soaked in water)
Instructions
- Rinse the rice (or barley) under cold water and cook it according to package instructions until tender. Set aside to cool.
- In a large mixing bowl, combine the pig’s blood, cooked rice, chopped onion, minced garlic, thyme, black pepper, allspice, salt, nutmeg, scallions, and parsley. Mix well until all ingredients are thoroughly combined.
- Rinse the hog casing again and carefully stuff it with the blood mixture, being careful not to overfill. Tie the ends securely with kitchen twine.
- Bring a large pot of water to a boil and gently place the stuffed casings into the pot. Reduce the heat and simmer for about 45 minutes.
- Once cooked, remove the black pudding from the pot and let it cool.
- Slice and serve, either warm or cold, often accompanied by a spicy sauce or fried plantains.
