    Ingredients

    • 6 ears of fresh corn
    • 1 cup of sugar
    • 1/2 cup of coconut milk
    • 1/4 cup of butter, melted
    • 1 teaspoon of salt
    • Banana leaves for wrapping

    Instructions

    1. Start by removing the husks and silk from the corn. Cut the kernels off the cobs and place them in a blender.
    2. Blend the corn until smooth, adding a little water if necessary to help with blending.
    3. In a large bowl, combine the blended corn, sugar, coconut milk, melted butter, and salt. Mix well until all ingredients are fully incorporated.
    4. Cut the banana leaves into rectangular pieces, about 10×15 inches.
    5. Place a few tablespoons of the corn mixture in the center of each banana leaf piece and fold the leaves over to create a packet, securing with kitchen twine or tying with strips of the banana leaf.
    6. In a large pot, add water and bring it to a boil. Place the wrapped pamonha packets in the pot, cover, and steam for about 45 minutes.
    7. Once cooked, remove the packets from the pot and let them cool slightly before unwrapping. Serve warm or at room temperature.
