    Instructions

    1. Prepare the lamb by cleaning and gutting it thoroughly. Rinse it with water and pat dry.
    2. In a bowl, mix olive oil, salt, cumin, coriander, paprika, black pepper, minced garlic, and lemon juice to create a marinade.
    3. Rub the marinade all over the lamb, ensuring it is well coated, including inside the cavity.
    4. Stuff the cavity with fresh herbs.
    5. If using a pit, prepare a fire and let the wood burn down to coals. Place the lamb on a spit or directly over the coals.
    6. Roast the lamb for about 4-6 hours, turning occasionally, until the meat is tender and the skin is crispy.
    7. If using an oven, preheat to 180°C (350°F) and roast for about 4-5 hours, basting with juices as needed.
    8. Once cooked, let the lamb rest for 30 minutes before carving. Serve with flatbread and a side of salad.
