- In a pan, heat olive oil over medium heat. Add chopped onions and sauté until translucent.
- Add chopped tomatoes, paprika, cumin, salt, and pepper. Cook until the mixture thickens, about 10 minutes.
- Heat a non-stick skillet over medium heat. Pour a ladle of batter and spread it into a thin circle. Cook until the edges lift, about 2-3 minutes.
- Place a spoonful of the filling on one half of the crepe, fold it over, and cook for another 2 minutes.
- Repeat with the remaining batter and filling.
- Serve warm, garnished with chopped parsley.
